Passatelli were, in our peasant tradition, the delicious dish to prepare for the holidays.
Cooked in a good meat and/or chicken broth, they are still a dish that here in Romagna is prepared with pleasure and we, at the Hotel Jorena, often offer them.
In kindergarten, they become a single, complete dish.
Here are the ingredient

- 10 medium eggs
- 500 g grated parmesan
- 400 g breadcrumbs
- 3 tablespoons flour
- Flavorings to taste: nutmeg, grated lemon zest, salt (a little) pepper if necessary
Preparation
Preparazione dei passatelli in brodo
1.Break the eggs, add the parmesan, then, a little at a time, the breadcrumbs, the flour and the flavorings, working the dough with your hands.
2.
Form balls to flatten with the appropriate tool, cut them to 5/6 cm and place them on a floured baking tray.
3. Then throw them into a pan with the boiling broth without moving them and cook for a few minutes.
